So. I'm starting this blog because I love to cook! I've made a few fabulous meals and I thought I'd start documenting them. The majority of my recipes come from the magazine Real Simple. This magazine is one of my favorite things in the world! It's not even just the recipes. There are so many useful tips and hints about life in general, and it's so helpful.
For my first post, I made a Real Simple recipe, but tweaked it a little bit. Here is the original recipe.
The recipe only calls for "cooked shrimp," so I made my own way of cooking it. I wanted to marinate the shrimp, so I found an interesting marinade on the Internet. I whisked together ranch dressing, dijon mustard, and lemon juice. Then I let the shrimp marinate for about 2 hours. I cooked the shrimp in a skillet on medium heat. After removing the shrimp from the skillet, I added cherry tomatoes, scallions, lemon juice, and garlic to the juices.
While cooking the couscous, I added spinach to it (another Real Simple tip) and stirred it together. Then in a big bowl, I combined the tomato mixture, shrimp, and couscous. I sprinkled it with fresh basil leaves and mixed it all together.
I may have overcooked the shrimp a tiny bit, but I still give this meal a thumbs up!
